Below is a list of all Rewards and how to get them in PS Stars. Please note that Rewards will change and rotate, so pay attention to any expiry dates where possible. Also keep in mind that there may be regional differences between various countries, so not every Reward outlined in this page will necessarily be available to you.

Why would anyone trade in their 15.000 points for Sekiro when they can get 60$ in store credit for the same amount of points and just buy it on sale or, you know, just have their pick out thousands of games instead of those 5 offered?
@YMM Agreed, that's what I'll be doing instead! Makes way more sense just to rack up points and load up on Gift Cards.
@KidBoruto @YMM on a similar note (in case you were curious and hadn't tried it) you get the same number of points whether you buy games with cash on the PSN store, or whether you use funds from your wallet. Sounds obvious, but the headline here is that you can load your wallet with funds from cheap PSN vouchers (like ShopTo and various other places sell), and get just as many points for spending less actual cash (and therefore spend less cash to earn enough points to claim a PSN voucher).
It's not the heist of the century or anything, and obviously the main benefit of getting cheap PSN vouchers is spending less cash in the first place, not claiming more wallet funds through PS Stars - but I think it's vaguely worth knowing

Does anyone know if you can redeem an infinite amount of the store credit, or do I only get one 5 and one 20 ever/per month etc
